Gut BUSTING hilarious!

I don't usually watch The Ellen Show, although, every time I do, i think she is freaking hilarious. Today, I had time during her show to see a little bit of it. I WAS ROLLING ON MY BED LAUGHING! Nora must have thought I was crazy! I went to YouTube, to see if there was anything similar. This is so FUNNY! I was laughing so hard.... I WAS CRYING!

You MUST make these... !!



So, I don't say that very often about my recipes. And maybe because I am pregnant, I love food so much, and everything tastes so good, but these things are soo yummy. I got the recipe from my sister-in-law last summer, who got it from her SIL. I never wrote it down, but have kind of adjusted it to what we love in our family! I made them last week, and Joel said, "Now that is something to write home about!" Which to me, means "BLOG" about.

What you need:
1lb. ground turkey
1lb. cole slaw mix
salt
pepper
3tb. Hoisin Sauce (Plus more for dipping)
10-15 egg roll wrappers
water for sealing
oil for frying

Directions:
In a large saucepan, brown the turkey. When it is almost done, but still a tiny bit pink, add the bag of cole slaw mis. This may fill your pan, but it will cook down, soon. Over medium heat, mix the meat, and veggies all together. When the mixture has started to cook down, add salt and pepper to taste. then add Husein sauce. Mix all together really well. You want the slaw mix to be very limp. This is where I like to taste test. ALOT! Once the mix is cooked through, and tastes simply divine... remove from heat. Cool completely. Let cool all the way through. This is VERY IMPORTANT. When it is no long warm... AT ALL... start to heat your oil in a pot over medium high heat. Then you can start filling your egg roll wrappers. You will use about 1 tablespoon per wrapper. I wish I would have taken pictures of this part... but you should know how to fill an egg roll. If not, try to follow along, oh heck... here are some pictures...




When wrapping these little guys, be very careful not to tear the wrap. If it tears, you must start over. Trust me... you do not want hot oil getting into your egg roll. So seal them up really tight! Then fry em. I would go into more details... but I have to eat em while they are HOT! (Of you have any questions, please let me know. I have never written a recipe before, and don't know if I am that great at it. All I know is that YOU MUST make these, and I MUST GO EAT THEM!!!)

These were taken last week. And as much as I DESPISE having my picture put on my blog... I have been getting life threatening emails from some people back home... and I either had to save myself, or fear the wrath. Of course if they want me, that have to come and get me, and maybe that would be more fun! We love love love visitors!!!

Anyways, I woke up one morning, and said, "Holy Crap... I popped!" So, we went to the beach, and come home, then I saw that I had a great BURN line, that I might as well take a picture of, and same with my belly. Then I woke up the next day and said, "I POPPED AGAIN!". I have been saying that almost every day now, and even pulled out the maternity clothes yesterday. I haven't gained any weight, I think my 2 year old is helping me in that area! But, if you ask me, I am definitely pregnant! And a little burnt too. HOE Down!

This will be the last time that I tell Lulu and Papa a video is coming. They have been refreshing, and refreshing, and refreshing, for... three days now, waiting for this video. Joel says, "Get a life", but I think its cute.

Friday we went to the Farmers Market for a HOE DOWN! If you are 75+, and in the Virginia Beach area, here is the place for you to go on a Friday night! There were a few young kids there too, but I could tell its where the seniors "Hang Out!". Nora had a ball. She removed her pink cowboy boots as soon as she saw other kids with their shoes off, but she arrived in true HOE DOWN fashion. Notice the bow at the end, when everybody starts clapping for the band...

The FOURTH!


What a fun holiday to celebrate! Especially if you live in a beach town. LOTS of out of town visitors... LOTS of traffic... lots of great summery things going on! We had a special visitor of our own. Last minute, Uncle Dan decided to swing down for a visit. We loved having him, although I think he isn't used to going to bed at 9pm, and waking up at 7am. We're "old timers" with a kid. But, we still loved it. Nora LOVES "UH HU Dan". On the fourth we were torn on what to do. We knew anything was going to be crowded, and packed with people, so we figured, lets be packed at the beach. Early evening, we hauled our gear to the Oceanfront Beach. There were lots of concerts, magicians, and other fun stuff going on, but we were content just building mountains in the sand. Some friends met us up there a little later, before the real SHOW began. Nora loved the way the fireworks looked, but wasn't crazy about the sound. What a fun, and relaxing day. We are "LOCALS" now, so we know the secrets to getting in and out in a timely fashion. PHEW!










Baby Update: On a different note, the baby is doing well. I have been feeling MUCH better the last couple of weeks, so that makes me much happier. I definately have a belly starting to pop, but that may be from the enjoyment of bi-weekly trips to Krispy Kreme. No pictures yet, so please stop sending me threatening emails... wanting to see baby pics! Trust me... they will come, and they WON'T be pretty. My next appointment isn't until the 22nd of July, and then on the 11th of August we find out what we are having. I am 99% sure I know what we are having, but other than looking at the babies privates, they want to make sure it is developing well, and has all of its limbs etc. Nora loves the fact the there is a baby inside my tummy, and knows everytime I eat, "the baby eats dinner too?" Of course, she has no idea how this will change her life, but the thought of it, excites her. Last time I measured, I was 9 toilet paper squares around. So the next time you use the "facilities" think of that! Thank you for all the emails about your thoughts and prayers. They are really felt!!!
